Delicious Cookies

Mmm chocolate chip cookies!!  Normally I hate to turn on the oven during the summer.  Lately we've had non-stop 90 degree weather.  Today it got up to 93 degrees.  Tomorrow it's supposed to be 91 and Thursday it's supposed to be 94.  Ick. 

Occasionally, like today, a storm rolls through and the 90 degree weather takes a nose dive.  That day I happened to bust out quite a few meals and my bf felt bad, so he baked me some "Cowboy" cookies from Vegan Cookies Invade Your Cookie Jar.  These ended up huge and delicious.  Nothing beats getting delicious homemade cookies without having to bake them yourself.

If you want to give them a whirl yourself, here's the recipe.  The cookbook is awesome; I'd definitely recommend you get a copy.  The Rocky Road cookies are also very, very good.



Cowboy Cookies
- 2c quick cooking oats
- 2c whole wheat flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 2/3c safflower oil
- 2/3c sugar
- 3/4c brown sugar
- 1/2c almond milk
- 1 tbsp ground flax seeds
- 1 tsp vanilla
- 1c shredded coconut
- 1c semi-sweet chocolate chips
- 1c toasted pecan pieces
Additional chips and nuts to decorate the top

Preheat oven to 350F.  Stir together oats, flour, baking soda, baking powder, and salt.  In a separate bowl, beat together oil, sugar, brown sugar, milk, flax seeds, and vanilla.  Fold in half the flour mixture to moisten, then fold in the remaining half.  Just before mixture is completely combined, fold in the coconut, chocolate, and pecans.

For each cookie, drop 1/4c of dough onto cookie sheets.  The dough will be sticky and thick.  LEave about 2 inches of space between each cookie.  Flatten slightly.  Press in any extra bits if you so desire.  Bake for 14-16 minutes until edges start to brown.  Let sit on baking sheet for 5 minutes after baking, then transfer to wire racks to cool.  Enjoy with a glass of your favorite plant milk!
